  2. Provide 3 cups Mexican style shredded cheese
  3. Take 1 (10 oz) can diced tomatoes & green chiles

  5. Use 1 lb ground meat of your choice
Steps to make Enchilada Stack:
  1. Preheat oven to 350°.
  2. Brown meat in skillet, drain if necessary. Season to taste (I use minced onion, salt and pepper).
  3. In mixing bowl, combine tomatoes, chiles, 3/4 of enchilada sauce, and meat.
  4. Cover bottom of 9-inch pie dish with enchilada sauce, place tortilla on top.
  5. Spoon sauce and meat mixture over tortilla, then sprinkle shredded cheese on top.
  6. Repeat layers until pie dish is nearly full.
  7. After your final layer, place one tortilla on top, then spread the rest of your enchilada sauce on it.
  8. Bake for 30 minutes. I sprinkle more cheese on for the last 10 minutes.
  9. Dinner is served!
