- Provide pig's trotters
- Get sugar
- Prepare dark soya sauce
- Take light soya sauce
- Take star anise

- Add 3 tablespoons of cooking oil into a pot (could use a cast iron pot), melt 3 tablespoons of sugar in the oil (on medium gas, slow stirring till caramelised)
- Fry the trotters pieces in the pot till evenly covered in caramelised sugar.
- Add ginger pieces, star anise, cinnamon bark to the pot, stir briefly, then add 1 bottle of Tsingtao beer (or any clear beer) till boiled, add 1 chopped leek (in pieces approx 4cm long)
- Cover the pot and slow cook for 2 hours
- Remove the star anise, cinnamon bark, Ginger and leek from the pot, then turn up the gas till boiled.
- Add light and dark soya, garlic, and salt into the pot, and another tablespoon of sugar (or more if prefer sweeter taste). Boil down the liquid till sticky
- Add chopped spring onion and serve
